BBQ Desserts

Barbecued Apple Crumble in foil

Throw these on the grill at your next BBQ or in the coals when camping.

1/2 cup rolled oats
3/4 cup plain flour
1/2 cup brown sugar
100g butter cut into small pieces plus more for foil
1 tsp cinnamon
5 apples (granny smith are best for this)
juice of 1 lemon

Combine oats, flour, sugars, cinnamon, and nutmeg. Cut in butter until mixture is crumbly. Toss bowl in the fridge while you prepare the apples. Wash apples and pat dry. Core and slice apples, then toss them with a squeeze of lemon juice.
Use 2 pieces of foil for each apple. Lightly butter centre of each piece. Place apples onto one of the foil pieces and sprinkle with the crumble mixture. Place top piece of foil (butter side down) on the package and fold the edges inwards until the package is well sealed. Wrap the entire package in another layer of foil - this will help prevent burning around the edges. Place the foil pack on the BBQ on medium heat for about 20 minutes. Let cool a minute or two before opening. Serve with vanilla ice cream & a spinkle of cinnamon.
