BBQ Vegetables

 

BBQ Eggplant

Eggplant is one of those veggies that are great served well done. Slice it into large pieces, brush with oil, sprinkle with salt and grill for about 8-10 minutes or until blackened. If it turns out to be too dry or too ‘burnt tasting’ for you, next time trying soaking in hot water for 30 minutes beforehand.


BBQ Zucchini

Couldn’t be easier: slice off both ends, cut lengthways, oil, season and grill for 2-3 minutes.


BBQ Capsicum

Capsicum is one of those great summer veggies that are great for the barbie because it’s always so moist. Cut into wide strips, or squares for skewers, oil and grill until just charred around the edges.


BBQ Potatoes

Spuds can be barbecued any number of ways, but our favourite is the classic jacket potato. Lightly oil the potato, season with salt, pepper and anything else that takes your fancy, wrap in al-foil and place on medium-heat for 45 minutes. Serve with chives, a dollop of sour cream and bacon bits.


BBQ Potatoes - Quick Version

Slice potates into thin slices. Lightly oil and season with salt and pepper. Throw on the hotplate or grill. turn when browned to your liking.


BBQ Tomatoes

Just like capsicums, tomatoes just ooze juiciness and flavour, and can be eaten for breakfast, lunch or dinner. Cut in half, brush with oil, season, and grill for a few minutes either side. Whole cherry tomatoes on skewers are also fantastic.


BBQ Mushrooms

There is barely a type of mushroom out there that doesn’t taste ten times better when barbecued. Brush with oil, season, and grill for 5-7 minutes.

 

BBQ Asparagus

No veggie’s potential is released more by a good barbecuing than asparagus. Simply place in boiling water for one minute, pat dry, brush with oil, season with salt & pepper, and grill for 3-4 minutes until the ends are browned. Serve with a lemon dipping sauce for a divine side dish or entrée.


BBQ Corn

Since visiting corn-country in the US, corn on the cob is a must for any barbie at my house. Simply strip the husks, brush with oil, season, and grill for 10 minutes, turning regularly. Serve drenched in butter to eat it like a true Midwestern American.


BBQ Baby Carrots

As a ‘dense’ vegetable, it is best to precook carrots in boiling water for a few minutes to soften them up a little. Pat dry, brush with oil, season as you please, and grill until charred.
