Zesti Z1100 Wood Fired Pizza Oven Installation Instructions

Step 1

Installation of the Z1100 is quite simple. Pay close attention when unpacking and dismantling the oven as it will go back together the same way.

Begin by placing the 6mm insulating boards onto your upstand base. Position these carefully as this will determine the final location of your oven.

The refractory bricks are pre-cut for you. Lay these out onto your insulating boards starting from the front edge and working back. Check that your bricks are even and pushed together tightly.
Now lift on the refractory dome. You will need two people for this as this is the core of the oven and where most of the weight is. Make sure the front of the dome is just behind the cut out in the second row of bricks.

Take the stainless steel ring and place it around the refractory dome with the bolts facing upwards.
Place the stainless steel plate back over the first row of bricks.

Two people can now lift the stainless steel arch into position. Make sure that the back of the arch slides into the slots at the front of the stainless ring and that the arch slides all the way down until it touches the floor.

Stand behind the oven and gently give the refractory dome a push forward toward the arch. Slide it forward until the front of the dome is tight against the back of the arch.

Using the silver insulating tape provided, tape over the back lip of the arch and the front of the dome creating a seal between the two.

Before you place the cap over the dome check the oven over and that all previous steps listed above are in order.

Test that the hood fits on the oven but do not tighten the dome nuts yet. If the hood fits neatly, remove it one more time and insert the expanding foam provided with the oven kit.
Shake the foam can well and spray it evenly between the stainless ring and the dome being careful not to over fill. Fill about half way up the inside of the stainless ring.

The foam expands quite fast so place the hood back onto the oven as quickly as possible and tighten the dome nuts.
If the foam expands and appears out of any gaps in or around the oven it is best to leave it until it is dry and trimmed off later with a sharp knife. Trying to wipe it off at this stage will only create a sticky mess.

Peel and Insert the flue into the flue-hole at the top of the arch and press down firmly.
You can now remove the plastic sheet from the front plate.
Allow the expanding foam at least 24 hours to set before using your oven.

 

If the oven is not under cover you should run a bead of silicone between the upstand base and stainless ring of the oven to prevent rain getting into the oven through the base.
